Asian Recipes: Great Korean Food
Lately, numerous individuals in the West have become interested in Korean food and recipes. One could taste Korean cuisines in a restaurant, or if you prefer you may try to cook it at home in your own kitchen.
Korean recipes are usually based around noodles, rice, meat, vegetables and tofu (which is called “dubu” in Korea). Majority of meals are served with an assortment of side dishes (“banchane”), as well as soup, steam rice, and kimchi (fermented veggies). Flavor is imparted using a variety of seasonings and spices including ginger, garlic, red chili paste (“gochujang”), salt, soy sauce, and fermented soybean paste (“doenjang”).
Few famous Korean recipes include:
* Gamjatang – A soup made from pork spine and potatoes. It typically also includes other green onions, vegetables, sesame seeds and hot peppers.
* Kongnamul-guk – Soybean sprout soup.
* Maeuntang – A hot and spicy fish soup.
* Jeongol – A seafood and vegetable stew.
* Hoe – Thinly slice rawfish, a bit similar to Japanese sashimi. Typically dipped in wasabi or red chili paste (“gochujang”), and served on cellophane noodles (“dangmyeon”).
* Sannakji – A uncooked, very fresh small octopus, seasoned and diced into portions and served – it may still be moving on your plate!
* Ramyeon – Noodles with meat and vegetables, similar to Japanese ramen noodles.
* Kongnamul-bap – Rice with soybean sprouts.
* Japchae – Potato noodles with beef, onions, carrot and spinach.
* Kalguksu – Flat noodles in a broth.
* Yukhoe – Raw beef topped with egg yolk, and seasoned with garlic, green onions and a variety of spices.
* Bulgogi – Meat or seafood cooked on a grill. General forms are chicken (“dak bulgogi”), pork (“dweji bulgogi”), and squid (“ojingeo bulgogi”).
* Dakgalbi – Grilled chicken.
* Galbi – Grilled pork ribs.
* Makchang – Grilled pork intestines (akin to chitterlings).
* Samgyeopsal – Grilled pork belly. Slices of meat are positioned inside lettuce with cooked rice and a spicy paste (“ssamjang”). An assortment of garnishes such as spring onion salad, chillies, or raw garlic soaked in samjang may be consumed with the dish.
